Tonight's Dinner Bean and Beef Burrito

Mexican Food Made Quick And EasyMexican food is one of those ethnic foods that's easy to make and has tons of options. It can be spicy or mild, appeal to vegetarians or carnivores, and always has people coming back for more. This beef and bean burrito is no exception.

Tacos and quesadillas seem to be the first entrées people think of when making Mexican food at home. They're easy to prepare, take practically no time, and are always a treat. But there are other favorites as well. Carne Asada, fajitas, carnitas, and of course, the burrito, although these don't seem to be made at home nearly as often. These are the entrées people tend to order when they go out to eat. Maybe it's because of the seasonings, or maybe it's because they seem to be more complicated than the other choices. But fear not, turns out a bean and beef burrito is just as easy to make at home as a taco or quesadilla and only takes a little more time.

Bean and Beef Burrito

Ingredients

1, 16-ounce can refried beans1 pound ground beef1 packet taco seasoning2/3 cup water4 large flour tortillas1 1/2 cups shredded cheddar and jack cheese, separated4 tablespoons salsa

Directions

Preheat oven to 350 degrees F.In a medium saucepan, heat the refried beans over medium heat. While the beans warm up, brown the ground beef in a large skillet over medium-high heat, 6 to 8 minutes; stir in taco seasoning and water; simmer for 5 to 7 minutes.Place tortillas flat on work surface; spread 1/4 cup warm refried beans onto each tortilla; add 1/2 cup ground beef to each tortilla and sprinkle 1/4 cup shredded cheese over beef.Fold the sides of the tortilla into the center and roll tortilla into the form of a tube; place tortillas, seam side down, on a large foil-lined cookie sheet; sprinkle tortillas with remaining cheese; cook burritos for 10 minutes, or until cheese is melted and lightly browned; serve with your favorite salsa.

Bagged lettuce, sold nationwide under various brand names, is being recalled due to possible listeria contamination.

River Ranch Foods of Salinas, California, has initiated a voluntary recall of bagged lettuce after a routine and random test by the FDA found possible listeria contamination.

What to look for

The products in question were sold nationwide in various sizes and varieties. They are sold under several brand names including River Ranch, Farm Stand, Hy-Vee, Marketside, Shurfresh, and The Farmer's Market.

The bagged lettuce was sold to consumers as well as food service distributors. The products have use-by dates between May 12 and May 22, 2012 or Julian dates between 116–125. How to make the best brownies

Best Brownie
PracticesBake the best brownies every time with these easy best brownie basics. Everyone loves ooey gooey fudgy brownies and making them at home is the way to go. Bake up some of the best brownies ever and share them with your family and friends and they will be begging for more. Here are some best brownie practices and ideas.

Brownies

Best Brownie Basics: The Chocolate

The best type of chocolate to use when making the best homemade brownies is unsweetened cocoa powder instead of solid chocolate. Your brownies will come out with a smoother consistency and super fudgy. It's also easier to control the sweetness and texture of the final brownie product.

>>Oreo Brownies with Marshmallows

You can use either Dutch processed or natural cocoa powder, but you should do a simple taste test to determine which you like better. Natural cocoa is typically better suited for brownies because it has a more intense flavor, but if you like a darker-color brownie, then Dutch processed is the way to go.

IMPORTANT NOTE: Remember, however, natural cocoa is the only option if you're also using baking soda in the recipe. Dutch process can be used with baking powder.

>>Cocoa Brownies

Best Brownie Basics: Cakey v. Fudgy v. Chewy

Whether you like cakey, fudgy, or chewy brownies there is a way to make them.

To make the best fudgy brownies, use less flour and an added egg yolk will do the trick. For the best cakey brownies, use less butter and flour and add baking soda to keep them light. For the best chewy brownies, more flour and whole eggs will make them perfect.

>>Brownies with Irish Cream Icing

These are, of course, just general guidelines; feel free to experiment with ingredients to get your perfect, desired texture. You should try to start out with a baseline recipe and add or reduce ingredients as needed.

>>Dark Chocolate Brownies with Orange Cream Cheese Frosting

As far as baking to get the perfect texture, keep a close eye because a few minutes too much or too little in the oven can be the difference between the best and worst brownies.

Best Brownie Basics: Extra Flavors

If you are a chocoholic, then you probably will not want to add anything else to your brownies (unless you are adding chocolate chips), but if you need a little something extra, then keep reading.

>>Chocolate Cream Cheese and Marble Brownies Nuts are the first go-to ingredient, which add some texture and taste.Marshmallows or marshmallow fluff are also great in brownies.Peanut butter is one of my favorite add-ins as are toffee or cream cheese.Coffee and mint can be something different or even butterscotch and caramel. For something even more different, swirl in jam like strawberry, grape, or raspberry flavor for a fruity surprise.

>>Super Easy Chocolate Fudge Brownies

There are so many different options, simply mix in your favorite flavors for a truly unique and delicious brownie.

Apple juice faceoff Dr. Oz vs. the FDA

How Much Arsenic
Is In Apple Juice?Dr. Oz made headlines when he suggested that parents should be concerned about the levels of arsenic in apple juice. The FDA, however, disagrees. So, who's correct? Could apple juice be dangerous?

apple-juice

Dr. Oz set the internet ablaze when he suggested that apple juice contains concerning levels of arsenic and that parents should take note. He said that we're very careful about protecting our children from arsenic in the environment in the U.S. -- keeping the water supply safe and keeping it out of pesticides -- but not all countries have those standards. He points out 60% of our apples come from overseas.

He conducted tests and concluded that the levels of arsenic in apple juice were high. Still, he didn't suggest that parents empty out those containers of apple juice in their fridge and never buy it again.

"I want everyone out there who has already purchased apple juice to keep drinking it," Dr. Oz said to ABC News. "I don't have any concerns about it in the short run. My bigger concern is over the next decade or the next generation. We may be exposing our kids to needlessly high levels of arsenic."

The Food and Drug Administration, however, disagrees. In a statement posted on its website, the FDA explains, "The FDA's test results do not support the findings of the Dr. Oz Show, and, in fact, are significantly less (2 to 6 ppb) than the levels found by the television program's analysis. Moreover, the vast majority of apple juice samples tested by the FDA over that past 20 years show that apple juice typically contains less than 10 ppb total arsenic."

The FDA also posted copies of two letters it sent to The Dr. Oz Show producer, explaining that the tests used to conclude that the arsenic levels in apple juice were not correct.

"The FDA believes that it would be irresponsible and misleading for The Dr. Oz Show to suggest that apple juice contains unsafe amounts of arsenic based solely on tests for total arsenic," the FDA concluded in its first letter. "Should The Dr. Oz Show choose to suggest that apple juice is unsafe because of the amounts of total arsenic found by EMSL Analytical, Inc.'s testing, the FDA will post this letter on its website."

The FDA then sent a second letter to Dr. Oz, citing test results that did not support those offered by Oz. The L.A. Times reports that Dr. Oz isn't backing down and that he has scheduled a follow-up show for Sept. 21.

Tell us:What do you think? Are you concerned about the level of arsenic in apple juice? Or do you think Dr. Oz's apple juice claims are blown out of proportion?

Caprese tart with herbed ricotta and balsamic reduction recipe

A Simple Elegant Dish For A Light DinnerFresh tomatoes are baked into a creamy herbed ricotta filling topped with fresh basil and drizzled with balsamic reduction. Pair this tart with a lovely green salad and a glass of white wine for the perfect summer meal.

Caprese tart with herbed ricotta and balsamic reduction recipe

One of my favorite foods would have to be super sweet ripe tomatoes and we eat lots of them here at my house. We wanted to try something new and the thought of turning a Caprese salad into a tart came to mind. It was a hit with my husband, and had I not grabbed a slice, he would have devoured the entire thing! It was great hot and just as good cold. I would not skip out on the balsamic reduction as it adds a sweet tang and really does its part in helping to bring the flavors together.

Caprese tart with herbed ricotta and balsamic reduction recipe

Yield 6 servings

Ingredients:1 roll refrigerated pie crusts (2 usually come in 1 box)1 head garlic1/2 tablespoon extra virgin olive oil1 (15 ounce container) part skim ricotta or whole milk ricotta1/2 cup freshly grated Parmesan cheese1 pint cherry tomatoes, sliced (or you can use plum tomatoes)1/2 teaspoon salt1/4 teaspoon pepper1/4 teaspoon marjoram1/4 teaspoon dried oregano1/4 teaspoon dried rosemaryFresh basil leaves1 cup balsamic vinegar1/2 cup sugarDirections:
Preheat oven to 400 degrees F.Cut the top off the head of garlic. Lay a piece of aluminum foil down, place the head of garlic in the center. Drizzle with the olive oil, wrap the foil around the garlic and bake for about 45 minutes. Once the garlic is done, carefully open the foil and allow to cool.Lightly grease a tart pan preferably one with a removable bottom. Unroll the pie crust and gently press the dough into the tart pan cutting off any extra dough that is hanging over the pan.In a mixing bowl, add the ricotta cheese, Italian herbs, salt and pepper and the Parmesan cheese. Once the garlic is cool enough to handle, squeeze all of the garlic pulp into the ricotta mixing very well.Add the ricotta mixture into the tart pan spreading evenly over the bottom of the dough. Layer the sliced tomatoes on top of the ricotta filling and bake for 30 minutes or until the crust is a golden brown. While the tart is baking, prepare the balsamic reduction. Add the balsamic vinegar and sugar to a saucepan and cook on med-high heat until it is reduced by half or has thickened. Cooking time varies for this sauce. One way to tell it is done is to dip a spoon into the reduction. If the reduction is thick and coats the back of the spoon, it's ready. Remove from heat and allow to cool.Remove tart from the oven and allow to cool a few minutes before slicing. Before serving, top with fresh basil and extra Italian seasonings, and with a spoon, drizzle the balsamic reduction over top. Serve next to a green salad for a light meal.

Quick-fixes for your summer fitness disasters

Quick-Fixes For
Fitness DisastersHas your summer fitness program hit the skids? You aren’t alone. Even the most motivated exercisers abandon their quests for a healthier and better looking body when a hiccup happens in their lives. These fitness disasters manifest themselves in all shapes and sizes ranging from a bout of illness, emotional turmoil (relationship breakup, bereavement), chronic stress (family and career pressures), or even losing focus after a long, relaxing vacation. Getting remotivated soon after a major set back is one of the most effective ways to regain your physique and wellness. Here are a few exercise commitment quick-fixes for your summer fitness disasters.Unmotivated Fitness GirlHow to deal with your summer fitness disastersDon't make a crisis out of a drama

Many people who begin a fitness and diet program start making excellent progress and then for a variety of reasons, just stop doing it and return to old tricks. This often happens due to a waning of motivation. They may have started out highly motivated but then lost interest with time. We as humans often forget how tough it can be to change a deep seated habit. We usually immerse ourselves in our fitness and diet program and expect it to go smoothly but then something gets in the way. A life event, a change in a daily routine or maybe you just decided it wasn't as important as you thought it was. Instead of making a crisis of it and nixing exercise altogether, deal with the drama and get back on track.

7 tips to get back on the fitness track

In addition to reminding yourself of all the reasons you have started losing weight and getting into shape in the first place, find ways to effectively rekindle your motivation. Not sure how to recommit? Here are a few tips and tricks that you can start today to help bring diet and exercise back into your lifestyle.

1. Use the power of imagination

Vividly imagine the time in the future when you've already achieved your goal. Imagine yourself feeling better, and looking better and with that whole new attitude that having a new body will bring to you.

2. Keep it in your face

Write down or print out the reasons diet and exercise are important to you. Put the list on your refrigerator so you are reminded each time you are in the kitchen. Make an extra copy and put it your bedroom as a reminder as you start your day and go to bed at night.

3. Set your own rules

Establish a solid set of diet and fitness rules. For instance, make a rule that you never miss a single workout, unless you are sick, injured, or have a very legitimate reason. Make daily exercise a high priority and view it as an integral part of your life. Missing workouts because you'd rather page through a magazine or watch a sitcom are not excuses. If you allow yourself to skip a training once for less than legitimate reasons, you'll allow yourself to miss another time, and another, and then find yourself facing another fitness disaster.

4. Make exercise manageable

Even if you could achieve your diet goals by calorie counting alone, you will be more successful and healthier if you are physically active. The number one barrier to exercise is time. Aim for at least 30 minutes of moderate physical activity most days of the week and, if necessary, break this up into three 10-minute segments per day to make it more manageable.

5. Avoid emotional eating

Eating in response to sadness, boredom or stress will quickly wreck your diet. It's true: We humans associate food with feeling better. So, when you become aware of your urge to eat in response to emotions instead of hunger pains, find something else to do that will distract you for 10 or 15 minutes. The easiest distraction is to simply take a walk. Chances are, your need to emotionally eat will subside and you'll ultimately feel better because you didn't consume those unnecessary calories.

6. Slow down your dining

If you eat quickly, your brain won't get the message that you are full until after you've overeaten. Put your fork down between each bite and pay attention to the meal you are eating. Tuning in can help you tame mindless munching.

7. Sideline a downward spiral

Don't allow one mistake start you on a downward spiral to square one. Setbacks happen but instead of spiraling down, admit your mistake, forgive yourself, and get back on track right away.

There are many mistakes that can send you back to your starting point, wrecking all your hard work and success at losing weight and getting into top shape. However, you can quickly recover from a fitness disaster by using your common sense and never ever doubting your fitness commitment. With this combination you are set to succeed.

Runners beware Crossing the finish line may accelerate fine lines

Do You Have
Runner's Face?Knee and ankle injuries are no longer the only physical concern if you’re a runner. On top of twists and sprains, you may also have to take beauty concerns into consideration. That’s right -- we’re talking about runner’s face, a new problem for anyone who makes a habit of pounding the pavement, which could speed up the development of fine lines and wrinkles. We take a deeper look at this exercise-related beauty issue.

Woman with runner's face

What is runner's face?

Runner's face generally occurs in both men and women ages 40-plus who exercise to improve their body, and in doing so end up with a hollow and bony face, explains board-certified plastic surgeon Dr. Brian S. Glatt of Premier Plastic Surgery in New Jersey. When exercising, an athlete burns off fat beneath the layers of his or her skin. This loss of fatty tissue results in a decrease of volume, which leads to a prominent appearance of the bones, forming of fine lines and a deepening of wrinkles. "Though you may look like a 20-year-old from the neck down, your face will easily give away your age," he says.

Runners also often have wrinkles for reasons other than running. Many runners spend long hours outdoors without proper sun protection, so the wrinkles can be a result of sun exposure. Runners are also often people who have lost a lot of weight, so the wrinkles are from the skin that was previously filled with fat.

Possible skin-saving solutions

If you are worried about runner's face, Glatt says the look of skin can be improved. "There are several solutions to rejuvenating gaunt, aged skin that has developed wrinkles or volume loss," he tells us. Non-invasive treatments such as chemical peels and laser skin-tightening can help minimize the lines formed within the skin itself, and make a big difference in producing a more youthful appearance.

Rejuvenating your appearance can also be a combination of Botox and injectable fillers such as Restylane, Juvederm Ultra and Radiesse, Glatt explains.

How injectable treatments work

Botox treatments can target lines in the brows or around the mouth, and results typically last about three to four months, explains Glatt. Juvederm Ultra and Radiesse work to restore volume in the face, giving it a fuller, more youthful appearance. These provide results that last at least a year, and often much longer. Restylane is used mostly for finer lines and wrinkles, not deeper contours, and tends to last for six to 12 months.

"In some patients, I've seen Botox last the full four months, but I've also seen instances where results have only lasted two months – everyone is different," he says. For runner's face Glatt's top recommendation for filling is Juvederm Ultra, which can restore volume to chin, cheeks, and cheekbones that become hollow or thin due to weight loss or age-related facial fat loss.

For true correction of sagging skin, however, Glatt says more invasive procedures may be required. "Eyes tend to show the first signs of aging. An eyelid lift or brow lift will rejuvenate the eye area and take years off your face."
